Ingredients
- 2 1/2 pounds (about 7 medium) red potatoes peeled
- 2 Tbls vegetable oil
- 1 Tbls unsalted butter
- 1 Tsp black pepper
- 2 tbls fresh chives
- For a Lyonnaise add chopped onions as you fry the potatoes!

Step 1
Preheat oven to 400f. Cut potatoes into 1-inch slices (use a mandoline if you have one). Heat the oil in a heavy cast iron (or other heavy bottom oven proof skillet) for 3 minutes. Add the potatoes and saute (and onions if using). stirring every few minutes until potatoes start to brown, about 10 minutes (Don't over crowd the pan or you will steam the potatoes vs. frying them). Stir in the butter, cover the skillet, and place in the oven for 30-45 minutes. Remove from the oven and add the salt and pepper. Sprinkle chives over the top. Adjust seasoning to taste, and serve.
