Chicken Fried Steak

Ingredients
- 2 lbs beek steak or bottom round
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 cup flour
- 3 whole eggs
- 1/4 cup vegetable oil
- 2 cups chicken broth
- 1/2 cup milk
- 1/2 teaspoon thyme leaves

Step 1
Preheat oven to 250 F.
Cunt meat into 1/2 inch thick slices. Season each piece on both sides with salt and pepper. Place the flour in a pie pan. Place the eggs into a separate pie pan. Dredge the meat on both sides in the flour. Tenderize the meat, until each slice is 1/4 inch thick. Once tenderized, dredge the meat again in the flour followed bu the egg and then the flour again. Let meat sit for 10-15 minutes before cooking.
Place oil in pan once it begins to shimmer add meat in batches. Cook each piece on both sides until golden brown. (About 4 minutes) Remove steaks to wire rack set if half sheet place into oven. Repeat until all meat is browned.
Add remaining vegetable oilt, or at least 1 tablespoon to pan. Whisk in 3 tablesppons of flour left over from dredging. Add the chicken broth and deglaze the pan. Whisk until gravy comes to a boil and begins to thicken. Add milk and thyme and whisk until the gravey coats the back of a spoon. Season to taste w. salt and pepper.
