Ingredients

  • Crust:
  • 6 oz ground almonds
  • 1 egg white
  • 2 oz caster (superfine) sugar
  • Topping:
  • 8 oz plain chocolate, grated
  • 2 1/2 c double cream
  • Garnish:
  • Toasted Almonds
  • Whipped Cream

Preparation

Step 1

Pre Heat oven 350

Work ground almonds, egg white and sugar into a paste and knead into a ball. On sugared surface roll out into a large 8 in pie tin. Leave to dry for 30 minutes.

Line crust with foil and bake blind for 20-25 minutes. Watch for burning. Let cool completely.

Melt chocolate in a double boiler, then mix in the cream, stirring all the time to prevent splitting. Remove from heat as chocolate starts to set, beat mixture into a light foam. Allow to cool for 1-2 minutes before pouring into cooled crust.

Leave to set, then cool in the refrigerator until serving
