Roast Roma Tomatoes

These are easy to roast and are very good to add to salad or sauces.
I make a lot so I can freeze some - usually eat them all so none left to freeze.

Ingredients
- 6 Roma tomatoes, skin removed
- 5 Tbs. olive oil (or Italian salad dressing)
- Sea salt and pepper

Preparation
Step 1
Wash the tomatoes, remove skins by dipping in hot water for a few seconds, and cut in half lengthwise.
Place in 9-inch pyrex dish, cut side up and close together.
Drizzle olive oil over the tomatoes, then sprinkle sea salt over the tomatoes.
Preheat oven to 350 F.
Roast tomatoes for about an hour.
Allow to come to room temperature.
I usually roast a whole lot and put the tomatoes in a bowl and put oil over them, and make sure they are covered.
