Matzo Pudding

  • 12 matzo pieces
  • 9 eggs, well beaten
  • 1 1/2 tsp salt
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 3 tsp cinnamon
  • 3/4 cup chopped walnuts
  • 6 large apples, peeled and sliced
  • 1/2 to 3/4 cup raisins

Step 1

Preheat oven to 350. Break matzo into pieces and soak in water until soft. Drain water. In separate bowl, combine eggs, salt, sugar, oil and cinnamon. Add egg mixture to matzo. Stir in nuts and raisins. Pour into greased casserole dish.
