Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg, beaten
- 1 t vanilla extract
- 1 1/2 cup ripe banana, mashed
- 1 1/2 cup all purpose flour
- 1 t baking powder
- 1 t baking soda
- 1/2 t salt
- 1 cup mini semi-sweet chocolate chips
- 1/2 cup chopped pecans
Preparation
Step 1
Blend butter and sugar. Add egg and vanilla; beat until thoroughly combined. Blend in banana. Combine flour, baking powder, baking soda and salt; add to butter mixture and mix well. Stir in chocolate chips and pecans. Fill greased mini muffin pans 1/2 full. Bake at 350 degrees for 12 to 14 minutes. Cool in pan 5 minutes; remove to a wire rack to cool completely
