Ingredients
- 4 medium pears, peeled, cored and chopped
- 3 medium cooking apples, peeled, cored and chopped
- 2 cups cranberries
- 1 cup sugar
- 3 tablespoons all-purpose flour
- 2 teaspoons finely shredded orange peel
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- 3/4 cup all-purpose flour
- 1/4 cup cornmeal
- 2 tablespoons sugar
- 1-1/2 teaspoons baking powder
- 1/4 cup butter, cut up
- 1/3 cup milk, half-and-half or light cream
- 1 egg, lightly beaten
- Vanilla ice cream or whipped cream (optional)
Preparation
Step 1
. In a large bowl combine pears, apples, cranberries, 1 cup sugar, 3 tablespoons flour, orange peel, lemon juice and salt. Toss lightly until just combined. Spoon into a 2-quart casserole dish. Bake, uncovered, in a 375 degree F oven for 25 minutes.
2. Meanwhile, in a medium bowl combine 3/4 cup flour, cornmeal, 2 tablespoons sugar, and baking powder. Using a pastry blender, cut butter into flour mixture until butter is pea-size. Combine milk and egg. Add to flour mixture all at once, stirring until just combined. Spoon in 8 or 10 mounds atop fruit mixture.
3. Bake 25 minutes more or until a toothpick inserted near the center of the topping comes out clean. Cool for 30 minutes. Serve warm with ice cream or whipped cream, if you like
