Ingredients

  • 2 Tbsp butter or marg
  • 1/3 c finely chopped onion
  • 1 tsp minced garlic
  • 1/3 c flour
  • 1 1/2 c evaporated milk
  • 1 1/2 tsp salt
  • pinch of ground nutmeg
  • 1 large stem fresh broccoli (6oz) florets and stems chopped fine
  • 1/3 c part skim ricotta cheese
  • 1/4 c grated Parmesan
  • whites from 3 large eggs

Preparation

Step 1

Oven at 375* Grease a shallow 1 qt. baking dish.
Melt butter in med. saucepan. Add onion and garlic and cook 3-4 min until translucent
Add flour and stir over low heat 1-2 min. Stir in milk, salt and nutmeg. Increase heat and simmer, stirring often, 6 min. or until mixture thickens.
Remove from heat. Stir in raw broccoli, ricotta & parmesan
Beat egg whites in med bowl with electric mixer until stiff peaks form when beaters are lifted.
Gently fold in broccoiu mixture. Pour into prepared baking dish.. Bake 35-40 min until set and browned
