Ingredients

  • 8 oz. uncooked penne pasta
  • 2 tbs butter
  • 1/2 medium sweet onion, chopped
  • 1 (8 oz) pacakage Mexican Velveeta, cubed
  • 1 (8 0z) container sour cream
  • 1 (10oz) can diced tomatoes and green chiles, drained
  • Garnish: fresh cilantro leaves

Preparation

Step 1

Prepare pasta according to package directions.

Meanwhile, melt butter in a large skillet over medium heat; add onion, and saute 3 to 5 minutes or until tenter. Add cheese, and cook. stirring constatnly, 5 minutes or until cheese is melted. Stir in sour cream until well blended. Stir in tomatoes and green chiles and pasta, cook, stirring constantly, 5 minutes or until thoroughly heated. Garnish, if desired.
Serve immediately.
