Citrus Flavored Shrimp & Arugula Salad

Ingredients

  • 1 T white wine vinegar
  • 2 t. mustard
  • 2 T lemon juice, divided
  • 1 T lime juice
  • 2 T orange juice, pluse 2 oranges, peeled and sectioned into wedges
  • Salt & pepper
  • 1/2 C olive oil, divided
  • 1 clove crushed garlic
  • 16 shrimp
  • 1/2 C white wine
  • 1/2 C chopped parsley
  • 2 bunches arugula
  • 1 fennel bulb, trimmed & julienned

Preparation

Step 1

In bowl, combine vinegar, mustard, 1 T each lemon juice lime & orange juice. Season with salt & pepper & whisk, adding 6 T olive oil in steady stream. Set aside.
In med skillet over med heat, warm remaining 2 T olive oil. Add garlic & saute for 2 min. Add shrimp, & deglaze with wine & remaining lemon juice. Season with salt & pepper & cook til liquid reduces byl half. Toss in parsley & set aside.
To serve, combine arugula & fennel in bowl. Pour in vinaigrette, season with salt & pepper & toss. Distribute greens among 4 plates & arrange shrimp & orange wedges atop.
