Ingredients
- 12 shucked oysters
- 1/2 cup buttermilk
- 1 tsp. Tabasco
- 1 cup all-purpose flour
- 1 tsp. each kosher salt, pepper, paprika

Preparation
Step 1
Place cooling rack on baking sheet.
Soak oysters in buttermilk and Tabasco 20 minutes.
Combine dry ingredients in Ziploc bag. Toss oysters in flour mixture and shake to combine. Dip again in buttermilk and flour mixture. Place on prepared cooling rack.
Heat oil to med-high. Add oysters, reduce hea to med. and fry until crisp, 4-5 min., turning once. Drain on paper towels; season with salt.
