Ingredients

  • 3 cups coarsley grated squash
  • 1/2 tsp. salt
  • 1 cup fresh breadcrumbs
  • 1 egg
  • 2 green onions, diced
  • 1/4 cup diced red bell pepper
  • 1-1/2 tsp. Old Bay seasoning
  • 1 tsp. Dijon mustard
  • 1 T. mayonaise
  • 1/8 tsp. red pepper flakes
  • 2 T. veg. oil
  • 1 T. butter

Preparation

Step 1

Place grated squash in colander; sprinkle lightly with salt and let stand 30 min. Press with paper towels to remove as much liquid as possible. Should be about 2 cups.

Place squash and remaining ingredients (except oil & butter) in bowl. Mix well. Form into patties. Chill.

Heat oil & butter to med. heat. Fry on both sides until brown.
