Smothered PorK Chops - Campbells Kitchen

Ingredients

  • 1 3/4 cups Swanson Beef Broth or Swanson Beef Stock
  • 2 T. cornstarch
  • 6 boneless pork chops, 3/4-inch thick (about 2 pounds)
  • 2 T. Olive Oil
  • 1 large onion, sliced (about 1 cup)
  • 2 cloves garlic, minced

Preparation

Step 1

1. Stir broth and cornstarch in a small bowl until the mixture is smooth. Season pork chops, if desired. (Salt and Pepper).

2. Heat 1 T. oil in a 12-inch skillet over medium-high heat. Add the port and cook for 5 minutes or until well browned on both sides. Remove the pork from the skillet.

3. Heat the remaining oil in the skillet. Add the onion and cook 3 minutes or until tender-crisp, stirring occasionally. (I added baby-bella mushrooms at this point). Add the garlic and cook for I minute, stirring often.

4. Stir the broth mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the pork to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the pork is cooked through.
