Ingredients

    # round beef

  • 1

    c bread crumbs

  • 1

    cup + 2 T heavy cream

  • 1/2

    cup grated onions

  • Salt and pepper

  • 3

    egg yolks

  • 1/2

    t dried thyme

  • 3

    T flour

  • 2

    cups beef broth

  • 2

    T red currant jelly

Directions

Mix beef and breadcrumbs. Then add 1 cup heavy cream, ΒΌ cup at a time. Add the onions, egg yolks, salt, pepper and thyme. Mix everything well. Shape the beef mixture into meatballs. Heat the margarine. Add one layer of meatballs. Fry the meatballs until cooked on all sides. When done place in a bowl. Fry as many batches as necessary. Drain the fat from the skillet. Add the flour and stir with a wire whisk. Gradually add the beef broth, stirring rapidly with the whisk. Stir in the broth until it melts. Add the meatballs and let them simmer for 15 minutes.
