Mom's "Spanish Porkchops"

My mother used to make these pork chops and the secret ingredient is now what I use in ALL pork recipes

Ingredients

  • 1 pkg thinly sliced, center cut pork chops
  • 2 tbsp apple cider vinegar or plain vinegar
  • salt
  • pepper
  • onion powder
  • garlic powder
  • 1 tbsp olive oil
  • vegetable oil

Step 1

NOTE: I find that pork cannot be marinated for too long or it really breaks down (esp. in vinegar) and the texture becomes weirdly soft. Not good.

Heat a little vegetable oil in a skillet (not to deep fry)
Pat porkchops dry
drizzle oil and vinegar on chops
sprinkle salt, pepper, onion & garlic powder
add chops to hot oil
when one side becomes golden brown, turn and cook the other side
drain on paper towels

Goes great with "Spanish Rice and Beans", Tostones and green salad (no one cared about carbs back then :)
