This is my daughter-in-laws favorite cake for her birthday. I double the cake recipe because the cake is thin. Everything else is the same amounts/ The amounts are in oz. this make for a more accurate measuring

Ingredients

  • For Cake:
  • vegetable oil
  • 6 3/4 oz of cake flour plus more for dusting pan
  • 1 tsp baking powder
  • 1/2 salt
  • 4 oz unsalted butter at room temp
  • 8 oz sugar
  • 5 whole eggs
  • 1 1/2 tsp vanilla extract
  • For Glaze:
  • 1 (12 oz) can evaporated milk
  • 1 (14oz) can sweetened condensed milk
  • 1 c half and half
  • For Topping
  • 2 c heavy cream
  • 8 oz sugar
  • 1 tsp vanilla extract

Preparation

Step 1

Preheat oven to 350. Lightly oil and flour 9x12 pan, set aside. Whisk together cake flout, baking powder, and salt in a medium bowl, set aside. In mixer beat butter until light and fluffy about 1 minute, gradually slowly add sugar until well mixed. With mixer running, add eggs one at a time, blending well with each one. Add vanilla. Add flour mixture in three batches. Mix just too combine. Add batter to prepared pan. Spread evenly. If you are not doubling this, it will seem like a very small amount. This is normal. Bake 20-25 minutes until golden brown. Cool poke in pan, on rack 30. Poke holes all over cake with skewer or fork. Allow to cool completely and prepare glaze

Whisk evaporated milk, condensed milk and half and half together. Pour over cake and refrigerate over night

Place Heavy cream, sugar and vanilla in mixing bow. Beat at medium speed until thinck. spread over cake. Refrigerate until ready to sever
