Ingredients
- 1/2 lb red skinned potatoes
- halved
- kosher salt
- 2 tbsp chopped fresh chives
- 2 tbsp fresh tarragon, chopped
- 2 tbsp white wine vinegar
- 1/4 cup plain greek yogurt
- freshly ground pepper
- 1/4 cup evoo
- 4 romaine hearts , torn
- 1 cooked chicken, skinned and meat shredded
- 1 cucumber, peeledhalved lengthwise, seeded and sliced
- 4 radishes, cut into this wedges
- 1 yellow bell pepper, thinly sliced

Preparation
Step 1
palce pottoes in a small pot and cover with water. season with salt and cover and boil until fork tender, about 6 minutes. drain and cool
meanwhile, pulse chives, tarragon, vinegar, yogurrt, 1/2 tsp salt and pepper to tastein a food processor. slowly drizzle evoo and pulse to make thick dressing.
toss romaine, potatoes, cucumber,chicken rdsishes and bell pepper with the dressing in a large bowl. season with salt and pepper
