Alaskan Amber Carnitas

Ingredients

  • 4 lb. boneless pork butt, cubed
  • 3 cups Alaskan Amber
  • 1 1/2 cups water
  • 1 tea. pepper
  • 12-16 cloves garlic, peeled and mashed
  • 1 tea. coriander
  • 1/2 tea. cumin
  • 1 tea. red pepper flakes
  • 2 tea. salt

Preparation

Step 1

Put meat into a Dutch oven. Add beer and water, bring to a boil, then lower to a simmer; skim foam. When foam has subsided, add remaining ingredients. Cover and simmer for 2 hour or until the meat is very tender. Remove lid, raise heat to a slow boil and continue cooking until liquid has completely evaporated. Remove from heat and serve hot.
