Bacon Cheddar Corn Muffins

Ingredients

  • Cooking spray
  • 1 1/2 c all purpose flour
  • 1/2 c yellow cornmeal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 c fat free milk
  • 2 tbs lemon juice
  • 2 tbs butter, melted
  • 1 egg
  • 1/2 c cheddar cheese, extra sharp, shredded
  • 4 center cut bacon slices, cooked and crumbled

Preparation

Step 1

Place muffin liners in muffin cups, spray and set aside.
Combine milk and lemon juice and let stand for 2 minutes. Add butter and egg, stir until well mixed. Add dry ingredients, cheese, and bacon. Bake at 400* for 17 minutes.
