Chicken-Pesto Panini

Ingredients

  • 8 lices Italian bread,1/2 inch thick
  • 2 Tbs butter/margarine, softened
  • 1/2 # thinly sliced cooked deli chicken or turkey
  • 4 Tbs basil pesto
  • 4 slices (1 oz each) mozzarella cheese
  • Spaghetti sauce, warmed if desired

Preparation

Step 1

Spread one side of each bread slice with butter. Place 4 bread slices with butter sides down, top with chicken, pesto, and cheese. Top with remaining bread slice, butter side up.
Cover and cook sandwich in 12 inch skillet over medium heat 4-5 minutes turning once, until bread is crisp and cheese is melted, or use panini maker.
Serve with spaghetti sauce.
