Soup - Minestrone Soup

Ingredients

  • 1 tsp Olive Oil
  • 2 cups Chopped Onions
  • 4 Large garlic cloves minced
  • 1 cup EACH of Carrots, Diced Potatoes, and sliced Celery
  • 8 cups hot water
  • 2 tbsp chicken style seasoning
  • 1 tsp EACH of dried basil and salt
  • 1 cup canned tomatoes
  • 3 cups cooked beans (any mixture of navy, soy, kidney, pinto
  • 1/2 cup uncooked macaroni
  • 2 cups chopped raw cabbage
  • 1 cup green beans
  • 3 cups sliced zucchini (about 2 small)
  • 1 tbsp snipped parsley

Preparation

Step 1

Heat the oil and Saute' the onions, garlic, carrots, celery, and potatoes. (May add part of the water to prevent sticking)
Add remaining water, chicken style seasoning, basil, salt, tomatoes, green beans, and macaroni.
Simmer for another 20-30 minutes.
Add cabbage, beans, and zucchini
Simmer until all ingredients are cooked.
Add Parsley to garnish.
Serve with whole wheat bread
