Healthy Sloppy Joes

Sloppy Joes were a favorite school meal for me when I was a little girl, and I was excited to find a healthy version that tasted great and I modified it to make even healthier--and it still tastes good! You can do this one in the slow cooker or on stove.
Ingredients
- 1 small onion, finely chopped
- 3 cloves minced garlic
- 300 g extra lean ground beef
- 1 large carrot, grated
- 2 teaspoons chili powder
- 1 teaspoon Splenda/brownsugar blend (or brown sugar if preferred)
- 1/2 tsp dried oregano
- 1 400g can chopped tomatoes
- 1 400g red kidney beans, rinsed drained and divided
- 4 wholemeal sandwich rolls (Slimming World Healthy B) or rice
- grated reduced-fat cheese (optional Slimming World Heathy A)

Preparation
Step 1
Heat large skillet over medium-high heat. Add onion, garlic and beef to pan. Season well. Cook 5 minutes or until meet is browned.
Add carrot, chili powder, sugar, oregano, and cook 2 minutes. Stir in tomatoes, bring to a boil. Reduce heat to medium, cook 10 minutes or until thickened.
Partially mash 1 cup of beans with a potato masher. Add mashed and whole beans to mixture and heat for 1-2 minutes. Serve on the wholemeal buns or over rice, sprinkle with cheese if desired.
