Harvest Apple Cupcakes with Cream Cheese Frosting

Be picky when picking your apples for this recipe. Cooking apples, such as Rome Beauty and Granny Smith have a firm texture and will hold their shape when baked in these cupcakes.

Ingredients
- Cupcakes:
- 1 1/2 c. sugar
- 1 c. vegetable oil
- 3 eggs
- 2 c. all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp aking soda
- 1 tsp vanilla
- 1/2 tsp salt
- 3 c. chopped tart apples
- 1 c. coarsely chopped nuts
- FROSTING:
- Cream Cheese Frosting
Preparation
Step 1
Heat oven to 350 degrees. Line muffin cups.
In large bowl, beat sugar, oil and eggs with electric mixer on low speed about 30 seconds or until blended. Add flour, cinnamon , baking soda, vanilla and the salt; beat on low speed 1 minute. Stir in apples and nuts.
Divide batter evenly among muffin cups, using aobut 1/2 c. batter for each.
Bake 30-35 minutes or until toothpick inserted in center of cupcake comes out clean. Cool 10 minutes; remove from pans to cooling racks to cool.
Make Cream Cheese Frosting as directed in recipe. Frost cupcakes. Stor frosted cupcakes or any remining frosting covered in refreigerator.

Using a cake Mix:
Substitute 1 box white cake mix for the cupcakes above. Plave paper baking cup in each of 28 regular sie muffin cups. Make cake mix as directed on box for cupcakes EXCEPT-add 2 tsp ground cinnamon with the egg whites. Stir in 3 c. finely chopped tart apples and 1c. finely chopped nuts. Bake 29-33 minutes.
