Potato Skins

Ingredients

  • 4 medium potatoes, baked
  • 2 slices bacon
  • 3 oz. grated cheddar cheese
  • 1 cup sour cream

Preparation

Step 1

Cut potatoes in half lengthwise and remove pulp with a spoon. Place skins on a baking sheet skin-side down.

Cut each bacon slice into 4 pieces. Process bacon in food processor until chopped into 1/4 inch pieces. Divide bacon evenly among the potato skins. Place bacon-filled skins under the broiler until bacon is crisp, 3 to 5 minutes.

Sprinkle cheese evenly over hot potato skins. Return to broiler until cheese is melted. Remove skins from baking sheet with a spatula and arrange on a serving plate. Serve hot with sour cream.
