Ingredients
- 2 T olive oil
- 16 oz pkg thick cut bacon, sliced into 1/2 inch pieces
- 1 to 2 yellow onion, chopped
- 1 to 2 cloves garlic, chopped
- 5 lbs russet potatoes, cubed and cooked
- salt and pepper to taste
Preparation
Step 1
Heat oil over medium heat in a very large skillet with a lid. Add bacon and cook until almost crisp. Add onions; continue cooking until bacon is done and onions are soft and almost translucent. Add garlic; cook for one to 2 minutes. Add potatoes; cook for 2 to 3 minutes. Using a broad spatula or pancake turner, flatten mixture in skillet. Cook without stirring for 3 minutes; add salt and pepper to taste. Begin turning the mixture over in large sections. Cook on other sides until golden. Sprinkle with salt and pepper again as needed.
