Ingredients

  • 9 lasagna noodles
  • 2 med. yellow squash, cut lengthwise into 1/4 in slices
  • 1 (16 0z) container fat free cottage cheese
  • 1 (10 oz) package frozen spinach, thawed and squeezed dry
  • 3 c shredded part skim mozzarella cheese
  • 1/2 c parmesan cheese
  • 2 large eggs, lightly beaten
  • 1/4 c chopped fresh basil
  • 1 garlic clove, crushed
  • 1/2 tsp salt
  • 1 (24 oz) jar marinara sauce

Preparation

Step 1

1.Cook noodles according to package – drain, rinse and set aside

2.Spray skillet and set over med. heat. Add squash and cook until golden, 2-3 min. per side. Set aside

3.Combine the cottage cheese, spinach, 2 c mozzarella cheese, ¼ c of parmesan , the eggs, basil, garlic and salt

4.Preheat oven to 375. Spread 1 c sauce in 9x13 pan. Top with 3 noodles, 1 cup sauce, and remaining filling. Top with remaining noodles, sauce and cheeses. Cover and bake 30 min. Uncover. Bake 20 min. – let stand 10 min. before serving
