Stuffed Picnic Loaf ("The Sandwich")

Ingredients

  • Grilled Vegetables (cut to your liking):
  • Portabello mushrooms
  • Eggplant
  • Vidalia onions
  • Red peppers
  • Zucchini
  • Yellow summer squash
  • Cheese (usually use Fontina & Gouda):
  • Provolone
  • Cheddar
  • Fontina
  • Monterey Jack
  • Colby
  • Gouda
  • 1/2 cup pesto
  • 1 large loaf Italian or French country bread (1 1/4 to 1 1/2 pounds)
  • Italian dresssing

Preparation

Step 1

Use any combination of the above ingredients to make the sandwich to your personal taste.
Marinate the vegetables in Italian dressing or any other store bought dressing or marinade.
Grill vegetables on grill until done. Meanwhile, cut loaf of bread in half. Remove some of the inner bread (making a trough). Spread pesto on both side of the bread and sprinkle with grated cheese. Once vegetables are done, place in the bread, place top half on bottom half, wrap with foil, and place on grill for 5-10 minutes until cheese is melted.
