Ingredients
- 1 box Jiffy Corn Muffin Mix
- 2 egg whites
- 1/3 cup fat free half and half
- 1/2 cup yellow whole kernal corn
- finely chopped onion (I didnt measure)
- 1 chopped jalapeno (canned)(no seeds)

Preparation
Step 1
Spray Mini muffin pan with butter flavored cooking spray. Fill each tin with 1 tablespoon mix. Yeilds 20 mini muffins.
