Corn muffins Mexican Style

Ingredients

• 1 box Jiffy Corn Muffin Mix
• 2 egg whites
• 1/3 cup fat free half and half
• 1/2 cup yellow whole kernal corn
• finely chopped onion (I didnt measure)
• 1 chopped jalapeno (canned)(no seeds)

Preparation

Step 1

Spray Mini muffin pan with butter flavored cooking spray. Fill each tin with 1 tablespoon mix. Yeilds 20 mini muffins.
