Ingredients
- 1 lb fresh green or yellow Italian flat beans, trimmed
- 2 tsp olive oil
- 1 orange bell pepper, sliced
- 1 garlic clove – minced
- Grated zest of 1/2 orange
- 1/4 tsp salt and pepper
- 2 T toasted pine nuts

Preparation
Step 1
1.Cook beans in steamer until tender
2.Meanwhile, heat oil in large skillet over med. high heat. Add bell pepper and cook, stirring frequently, until crisp tender, about 2 min. Add garlic and cook, stirring constantly about 30 sec.
3.Remove skillet from heat; stir in beans, zest, salt and pepper. Serve sprinkled with pine nuts.
