Creamy Potaoes Au Gratin

Ingredients

  • 4 russet potatoes, peeled, sliced 1/4 inch thick and divided
  • 1 onion, thinly sliced
  • salt and pepper to taste
  • 3 T butter
  • 3 T all purpose flour
  • 1/2 t salt
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese

Preparation

Step 1

Arrange half of potato slices in a greased one quart casserole dish. Top with onion and remaining potatoes; add salt and pepper to taste. In a medium saucepan, melt butter over medium heat. Add flour and salt; stir constantly with a whisk for one minute. Stir in milk; cook until thickened. Stir in cheese; continue to stir until melted. Pour cheese sauce over potatoes; cover with aluminum foil. bake at 400 degrees for 1 1/2 hours. Serves 4
