Chicken and Broccoli Rabe with Fettucini

• Roast chicken, meat shredded
• Fettucini
• Chicken broth
• lemon juice
• Broccoli rabe
• parsley
• lemon zest
• olive oil
• toasted pine nuts
• Parmesan cheese

Preparation

Step 1

Blanch broccoli rabe and remove to ice water, saving water to cook fettucini in. Cook fettucini while reducing chicken broth and lemon juice. Combine chicken, fettucini, chicken broth, parsley, lemon zest and olive oil. Top with toasted pine nuts and Parmesan.
