Spiced Peach Jam

Ingredients

• 4 1/2 C peaches, mashed or finely chopped(about 4 lb)
• 2 Tbsp lemon juice + zest from 1 lemon
• 1 pkg Sure Jell Less or no sugar pectin (pink box)
• 3 C sugar*
• 2 tsp cinnamon
• 1/4 tsp nutmeg
• 1 slice candied ginger, minced
• Remove 2 Tbsp sugar and replace with 2 Tbsp molasses
