Pumpkin Cake (Swan and Dolphin)

Ingredients

  • 2/3 Cups Butter
  • 11/2 Cups Light Brown Sugar
  • 2 Large Eggs
  • 2 Tsp. Vanilla Extract
  • 2 Cup Canned Pumpkin
  • 3 Cups All Purpose Flour
  • 11/2 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 11/2 Tsp. Cinnamon
  • 3/4 Tsp. Ginger
  • 1/2 Tsp. All spice
  • 1/2 Tsp. Mace
  • 1/8 Tsp. Cloves
  • 1 Cup Milk
  • 1/3 Cup Sour Cream

Preparation

Step 1

1. Preheat oven to 350°.
2. Using a mixer with the paddle attachment, cream butter in a mixing bowl until soft. Add the brown sugar and mix until light and fluffy. Add the eggs one at a time scraping the bowl after each addition. Add vanilla and pumpkin. Add flour and spices in three additions alternating with the milk.
3. Stir in the sour cream. Bake in kougloff pan for 1½ hrs.
