Asparagus Parmigiano

Ingredients

  • 1 pound thin asparagus
  • Pinch of salt
  • 2 teaspoons olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1 1/2 tablespoons lemon juice
  • 3 tablespoons melted butter
  • Freshly ground black pepper to taste

Preparation

Step 1

Break the tough woody ends off the asparagus and discard.

Fill a 2 quart pot two-thirds full with cold water. Bring to a boil and add the salt and the oil. Blanch the asparagus for 2 minutes and drain.

Immediately rinse in cold water to stop the cooking. Drain very well.

Place the asparagus in and 8 x 8 inch glass baking dish and sprinkle with the Parmesan cheese. Drizzle with the lemon juice and melted butter and top with freshly ground black pepper to taste.

Bake in a preheated 350 degree oven for 5 to 7 minutes or until the cheese is melted.
