Stir Fried Chicken with Straw Mushrooms

Ingredients
- 2 boneless chicken breasts
- 1 onion sliced thinly
- 2 tsp. cornstarch
- 1 tsp. cornstarch dissolved in 1 Tbs. water
- 4 Tbs. sesame oil
- 1 can baby corn
- 8 oz. fresh or frozen peas
- 1 can straw mushrooms
- 1 egg white
- 1 tsp. salt
- 2 slices fresh ginger
- 1 Tbs. chinese cooking wine

Step 1
Thinly slice chicken, cut into 2" pieces. Place in large bowl, sprinkle with 2 tsp. cornstarch. Add egg white and salt to wine and mix well. Heat 2 Tbs. oil in skillet and add onions, peas, salt, corn, mushrooms. Stir fry 2 minutes, remove and set aside. Heat remaining oil, about 30 seconds and add chicken and ginger. Stir fry 3 minutes or until done. Add vegetables, mix in dissolved cornstarch, stirring until glazed. Serve over rice.
