Mexican Shrimp Cocktail


Easy to make Mexican Shrimp Cocktail recipe.

  • 1-2 pound cooked and peeled shrimp (50-60 count)
  • 2 large chopped tomatoes
  • 1/2 small white onion, chopped
  • 1/2 cup cilantro slightly chopped
  • 1/2 jalapeno diced
  • 1 avocado chopped
  • V8 tomato juice, enough to cover all ingredients
  • lime juice, to taste
  • salt
  • pepper

Step 1

Add the avocado, onion, tomatoes, jalapeno, cilantro and lime juice to a medium size bowl and stir.

Chop the shrimp into bite size pieces and add to the avocado mix. Fold gently into the mixture.

Slowly pour the V8 juice over the shrimp mixture until you've reached your desired consistency.

Season with salt and pepper to tasting.
