Chicken Piccata

Ingredients

  • 12 boneless, skinless chicken tenderloins
  • 1/2 t pepper
  • 1/2 t garlic powder
  • 1 egg beaten
  • 2 T milk
  • 1 cup dry bread crumbs
  • 1 T margarine
  • 2 T oil
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 t chicken bouillon granules

Preparation

Step 1

Flatten chicken between 2 layers of plastic wrap with a mallet; sprinkle with pepper and garlic powder. Whisk egg and milk together. Dip chicken in egg mixture; coat with bread crumbs. Melt margarine and oil in a skillet over medium heat. Saute chicken for 4 to 5 minutes on each side, until cooked through. Set aside chicken and keep warm; drain skillet. Add water, juice, and bouillon to skillet and simmer until blended; pour over chicken. Makes 6 servings
