Red Velvet Cake

Ingredients

  • 2 cups All purpose flour
  • 1 tsp. Baking soda
  • 1 tsp. Salt
  • 1 1/2 cups Sugar
  • 1 cup Buttermilk
  • 1 3/4 cups Vegetable oil
  • 2 Eggs
  • 1 tsp. Vanilla
  • 2 oz. Red food coloring
  • 1 tsp. Cider vinegar
  • FROSTING
  • 1 Pkg Cream cheese (8 oz) softened
  • 1/2 cup 1 stick butter
  • 1 box 1 lb. confectioners sugar minus 1/2 cup 1 tsp. Vanilla extract

Preparation

Step 1

Preheat oven to 350 degrees.

3 8" round cake pans, greased & floured

To make the cake:

In a medium bowl, sift together flour, baking soda and salt. In a mixing bowl, using an electric beater, cream sugar, then beat in buttermilk, oil and eggs. Blend dry ingredients into creamed mixture. add vanilla, coloring and vinegar.

Bake for 30-35 minutes. Cool for 10 minutes, then invert onto baking racks and cool completely. Frost.

Frosting:

In a medium bowl, using an electric beater, mix cream cheese, butter and sugar until smooth. Add vanilla extract, beat well. Spread between layers on sides and top of cooled cake.
