- 2 TSP GROUND SAIGON CINNAMON
- 3 CUPS GRATED CARROTS
- 1 CUP CHOPPED PECANS
- FROSTING:
- 1/2 CUP BUTTER
- 8 OUNCE CREAM CHEESE
- 4 CUPS CONFECTIONERS SUGAR
- 1 CUP CHOPPED PECANS

Step 1
PREHEAT OVEN TO 350 F AND GREASE 9 X 13 PAN
IN A LARGE BOWL BEAT TOGETHER EGGS, OIL, SUGAR AND VANILLA, MIX IN FLOUR, BAKING SODA, AND BAKING POWDER, SALT, CINNAMON,, STIR IN CARROTS ,AND FOLD PECANS INTO MIX. POUR INTO PAN
BAKE IN OVEN 40 TO 50 MINUTES CHECK WITH TOOTH PICK IF COMES OUT CLEAN REMOVE FROM OVEN AND LET COOL IN PAN. PLACE ON CAKE DISH.
MAKE FROSTING COMBINE ALL INGREDIENTS EXCEPT PECANS,,, WHIP TOGETHER THROUGHLY AND APPLY TO CAKE,, APPLY PECANS AND SERVE
