Rave Review Coconut Cake

Ingredients

  • Frosting:
  • 1 18 oz. box yellow cake mix
  • 1 3 oz. pkg. vanilla instant pudding
  • 1 1/3 cups water
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 cups flaked coconut
  • 1 cup chopped pecans
  • 4 tablespoons margarine
  • 2 cups coconut
  • 1 8 oz. cream cheese
  • 2 tablespoons milk
  • 3 1/2 cups sifted powdered sugar
  • 1/2 teaspoon vanilla

Preparation

Step 1

Combine first 5 ingredients in mixing bowl. Beat at medium speed for 4 minutes. Stir in nuts and coconut.

Frosting:
Melt 1/2 of margarine in skillet, add coconut and stir until golden brown. Spread coconut mix on paper towel to cool. Cream remaining margarine with cream cheese, add milk and sugar alternately. Beat well; add vanilla. Stir in 1 3/4 cups coconut. Spread between layers and on top of cake. Sprinkle remaining coconut on top.
