Feta Cheese and Artichoke Crostini

Ingredients

  • 1 14 oz can artichoke hearts
  • 1 cup feta cheese
  • 1/2 cup sour cream
  • 2 tbsp finely diced red onion
  • 1 clove garlic
  • 2 tsp chopped fresh thyme
  • 2 tbsp minced parsley
  • 2 tbsp finely diced tomato or red pepper
  • 1 baguette

Preparation

Step 1

1. Drain artichokes and chop in food processor.
2. Add feta cheese and pulse.
3. Transfer to bowl, stir in sour cream, onion, garlic, and thyme.
4. Cover and refrigerate.
5. Slice baguette thinly and arrange slices on baking sheet.
6. Brush with olive oil, toast in 350F oven until crisp (5-8 minutes).
7. Serve feta mix, parsley and tomato alongside crostini, crackers, or cucumber slices or smooth over crostini and sprinkle with parsley and tomato.
