Egg Custard Pie

Ingredients

  • 1 Pie pastry shell
  • 3 eggs
  • 1/2 cup Sugar
  • Pinch Salt
  • 1 cup Milk
  • 1 tsp. Vanilla

Preparation

Step 1

Line pie plate with pastry shell. Prick bottom and set on ice til required. Brush bottom & sides with egg white wash to prevent soaking bottom.

Boil milk. Lightly beat eggs (not frothy), add sugar and salt and stir in hot milk (Can add 1/2 cup grated coconut if desired)

Pour filling into pastry. Bake at once in fairly hot oven (400 degree).

Reduce heat after first 10 minutes, otherwise custard will boil and curdle.

Cook until pastry is golden brown and mixture is set - about 30-40 minutes.
