  • 2 cups white sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 4 to 5 cups fresh sliced peaches
  • 1 to 2 pints fresh raspberries
  • Ingredients for topping
  • 2 cups flour
  • 1 cup white sugar
  • 4 teaspoons baking powder
  • 2 ounces 1/2 stick cold unsalted butter
  • 1 cup milk
  • 1 teaspoon vanilla

Step 1

Preheat oven to 375 degrees
To make filing, combine sugar, cinnamon, and cornstarch in a bowl, add peaches to coat with sugar mixture. Transfer to a saucepan, and cook on medium heat until peaches come to a boil. Lower heat and simmer until sauce thickens. Pour filling into a 9 x 13 inch baking dish. Distribute raspberries evenly on top of peach filing. To make topping, combine flour, sugar, and baking powder in a bowl. Cut butter into small pieces, and cut into flour mixture. Add milk and vanilla, and mix with a spoon or spatula, until combined. Drop spoonfuls of the dough mixture onto the peach and berry filing. The dough will spread a bit, so leave a little room between dollops. Sprinkle with sugar and bake for 45 minutes or until a tooth pick inserted into the center comes out clean.
