Lindsey's Orange Chicken

While Brian was at college in Alva, we kept hearing about Lindsey Rhodes' Orange Chicken. He was sad that he wouldn't get to eat it anymore since he was moving back. He asked her for the recipe but she said she didn't really have one. For his birthday though, he received a box with honey and marmalade and this recipe. She had typed one up just for him! :)
Ingredients
- 1 bag of frozen stir-fry mixed vegetables
- 1 cup of honey
- 1 cup of orange marmalade
- 1 tsp chili powder
- Diced chicken, breaded (frozen chicken nuggets or strips cut into small pieces work well)
Preparation
Step 1
1. Place bag of vegetables in a skillet to cook. While they are cooking, in a bowl mix together the honey, orange marmalade, and chili powder.
2. When veggies are soft, pour the honey mixture over them. Keep your skillet on and turn down to low heat.
3. If you need to cook the chicken, just follow directions on the package. When the chicken is ready, add it to the skillet. Stir chicken so it is coated with the sauce. Now, this is where I add honey until Matt says it tastes good. So just drizzle honey over chicken and veggies, stirring afterwards. Taste it to see if you need more. If you feel it needs more of an orange taste, just add some orange marmalade.
4. When it is tasting great, let it simmer for about 10 minutes. Serve over white rice and enjoy!!!
