Mediterranean Pasta with Fire Roasted Tomatoes

Ingredients
- 2 lbs medium plum tomatoes halved lengthwise
- 1/2 c olive oil, divided
- 2 cloves garlic, minced
- 1 tbsp McCormick Italian Seasoning
- 1/2 tsp crushed red pepper
- 1/2 tsp sicilian sea salt
- 8 oz. pasta

Preparation
Step 1
Place tomatoes cut sides up on a foil lined pan. Mix 1/4 c oil, garlic and seasonings in small bowl. Spoon over tomatoes. Drizzle with 2 tbsp of the remaining oil.
Roast in a preheated 400 degree F oven 45-60 minutes until tomatoes are soft and browned on top.
Prepare pasta as directed on package. Drain well. Place 1/2 roasted tomatoes and 2 tbsp oil in large bowl. Coarsely mash the tomatoes. add pasta and the remaining tomatoes; toss to coat pasta well. Sprinkle with shredded parmesan and additional red pepper if desired.
