Ingredients

  • Filling:
  • 1 T butter melted
  • 3 cups hash browns thawed
  • 3 green onions - thinly sliced
  • 2 large eggs - whites only whisked
  • 1/4 t salt
  • 1/4 t pepper
  • 6 slices bacon
  • 1 small red pepper
  • 1/2 cup cheddar cheese
  • 6 large eggs
  • 1/4 t salt
  • 1/4 t pepper

Step 1

Preheat oven to 425. In a boel, combine butter, hash browns, green onions, egg whites, salt, pepper. Mix well. Divide mixture into 6 cup nuffin tin. Press mixture into bottoms and up the sides. Bake on bottom rack about 15 minutes. Set aside to cool.
Cook bacon until crispy. Remove most of the grease and cook the red pepper in the rest until soft. Crumble bacon and red pepper and divide among the cups. Sprinkle egg cups with chees and then crack 1 egg into each cup. Bake until whites are set but the yolks are still runny. Season with salt and pepper.
