Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp pumpkin pie spice
- 1 cup butter, softened
- 1 cup sugar
- 1 15 oz can pumpkin
- 2 eggs
- 1 tsp vanilla

Step 1
Preheat oven to 375 degrees. Using a small bowl, combine flour, soda, salt and spice. Set aside. Using a mixer, beat butter and sugar until creamy. Then add pumpkin, eggs and vanilla. Gradually add in the flour mixture. Drop rounded tablespoonfuls two inches apart onto a well-greased cookie sheet. Bake 18 to 20 minutes until edges are lightly browned. Let stand 5 minutes. Remove from cookie sheet and cool completely. Yields about 30 cookies.
