Marinated Cheese

Ingredients

  • 1/2 c. olive oil
  • 1/4 c. white wine vinegar
  • 1-2 jar pimentos, drained
  • 3 T. parsley chopped
  • 3 T minced green onion
  • 1 t. sugar
  • 3/4 t. dried basil
  • 1/2 t. salt
  • 3 cloves garlic minced
  • 8 oz. cream cheese, chilled
  • 8 oz. cheddar cheese chilled

Preparation

Step 1

Combine olive oil, vinegar, pimento, parsley, onion, sugar, basil, salt, pepper and garlic in a jar. Cover tightly and shake vigorously until well combined. Cut cheddar in half lengthwise and slice into squares (like square checkers). Repeat with cream chesse. Arrange slices alternatley in a shallow dish standing on edge. Pour marinade over cheese and refrigerate 8 hours. Transfer to serving platter. Spoon marinade over top and serve with crackers.
