Over the Rainbow-Mac and Cheese****

Ingredients

  • 1 pound elbow macaroni(4 cups)
  • 1 stick butter
  • 1/2 cup shredded muenster
  • 1/2 cup shredded mild cheddar
  • 1/2 cup shredded sharp cheddar
  • 1/2 cup shredded monterey jack
  • 8 oz velveeta
  • 2 cups Half & Half
  • 2 eggs beaten
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1 T butter
  • buttered bread crumbs

Preparation

Step 1

Preheat 350*
-Cook pasta in salted water for 8-10 min.
-Drain pasta, pour back into pot and stir in butter.
-Transfer into large bowl.
-Add eggs, cheeses and half & half.
-Season with S&P.
-Pour into buttered casserole dish.
-Dot with 1 T butter.
-Bake for 35 min.
*cover with foil for first 10 min, add buttered bread crumbs at this time.
